Curry is also better the next day! One of my favorite meal preps and also what I think I’ll be making for dinner/meal prepping tonight.

Looks good!! I keep the rice separate for prep ahead and like a thicker curry but if you like it that’s what matters!
I’d keep the rice separated from the curry. With that much sauce the rice grain will lose its shape and that’s unappealing to me.
