who knew feeding yourself as an adult would be so hard. this is why meal prepping can be so helpful! we’re going through 3 healthy & tasty meals that you can make this week. lets go 🙂

♥ Recipes!

Chia pudding
Ingredients:
1/4 cup cocoa powder or peanut butter powder
3 tbsp maple syrup
1 pinch sea salt
1 tsp vanilla extract
2 1/4 cups unsweetened vanilla almond milk
1/2 cup chia seeds

Method:
1. Mix cocoa powder, maple syrup, sea salt, vanilla extract, almond milk and chia seeds until combined.
2. Let sit 30 minutes and then mix again until combined.
3. Set aside in the fridge until set, about 30 minutes. Enjoy!

Breakfast Wraps (freezer safe!)
Ingredients:
10 medium pita wraps
5 eggs, scrambled
10 breakfast sausages, sliced
200g frozen peppers
50g spinach
2 green onions, sliced
2 avocados, sliced
5 slices cheddar cheese
2 tsp smoked paprika
1 tsp red pepper flakes
Salt & pepper
Mayonnaise

Method:
1. Cook frozen peppers in a pan on medium heat. Add paprika, red pepper flakes and black pepper. Once hot, set aside.
2. Assemble the wraps. Start with your pita then top with spinach. Add egg, sausage, peppers, avocado, green onion, mayo and cheddar cheese.
3. Tuck in the sides of the wrap and roll the pita up like a burrito. If eating right away, heat on both sides in a pan and enjoy! Otherwise, roll each wrap in foil and store in the freezer. Once ready to eat, wrap in a wet paper towel and heat for 60 seconds. Flip the wrap and heat for an additional 45 seconds. Enjoy!

Mediterranean Couscous Salad
Ingredients:
2 cups pearl couscous
1 can chickpeas
1 cucumber, chopped
1 pint cherry tomatoes, quartered
1/2 a red onion, small diced
1 container pearl mozzarella
3 cloves garlic, minced
1 lemon, juiced
1/3 cup olive oil
1 tbsp fresh dill, chopped
16 basil leaves, chiffonade cut
Salt and pepper to taste

Method:
1. Prepare the pearl couscous per the packages instructions.
2. In a large bowl, add the couscous, garlic, lemon juice, olive oil, dill, salt and pepper and mix.
3. Add the chickpeas, cucumber, tomato, red onion and mozzarella and mix until combined.
4. Serve garnished with basil. Enjoy!
