I’m Brazilian-American, and having grown up in Brazil but living in the U.S., I miss **authentic** açaí bowls dearly.
Well, as luck would have it, açaí seems to be an EXCELLENT berry for keto, and I found an easy way to make a bowl that tastes 80% like the real deal I had growing up on the beaches of Rio!
**- 2 packs (198g) of frozen açaí (usually in most grocery stores now, but found these at Trader Joe’s). Make sure the ones you get have no added sugar.**
**- Roughly 8oz of water (more or less for your desired consistency)**
**- Swerve to taste (for me, that meant quite a bit, maybe 1/4 – 1/2 cup)**
**- A pinch of xanthan gum**
Blend. I used a hand blender in a long blending cup and it worked great! As mentioned, adjust water up or down to get the consistency you prefer, but the one show in my image is roughly the one I always consumed in Brazil. You can also add a bit of heavy cream if you want to up the fat content, but it will change it into more of a creamy smoothie than a traditional açaí bowl
People love to do all kinds of wild things with açaí bowls but I am a purist and enjoy it without any additions. For keeping with keto, some additions you might like include pumpkin seeds, peanut butter, sliced strawberries, blueberries, and coconut shavings.
For my next iteration I am going to try adding guaraná powder. The traditional stuff in brazil is made using a guaraná syrup, which naturally is impossible to find without sugar, but I’m thinking adding the powder might make for a good substitute (and, a nice kick of caffeine).
