My mother gave me these shallots from her garden at the end of summer.
Are they too old? I feel they look like theve started to try and sprout and might be fridge burnt.

Yellowing rings is a sign of an onion showing its age, just toss those parts out and the rest is fine. Kinda like an apple that starts to brown up in some spots when it gets old. Cut those parts off and it’s fine
If the onion starts going soft and browning then it’s not safe to eat. Shallots especially will tend to sprout when they’ve gone past their expiration
