**Ezogelin Soup ✨ Brautsuppe ✨**

**Ingredients:**

– 4 tablespoons Red Lentils
– 1.5 tablespoons Rice
– 1.5 tablespoons Coarse Bulgur
– 1.5 liters Water or Broth

**For the Sauce:**
– 2 tablespoons Olive Oil
– 2 tablespoons Butter
– 1 Onion (finely chopped)
– 1 teaspoon Pepper Paste
– 1 teaspoon Tomato Paste
– 2 cloves Garlic
– 1.5 tablespoons Flour
– 1 tablespoon Dried Mint
– 1 teaspoon Red Pepper Flakes
– Salt

**Instructions:**

1. Wash the lentils, bulgur, and rice thoroughly. Place them in a pot with water or broth and bring to a boil. Skim off any foam that forms on the surface. Cook until they are very soft, about 35-40 minutes.

2. In a separate pan, melt the oils and sauté the onions until they are nicely caramelized. Add the flour and cook for another minute until fragrant.

3. Add the crushed garlic, tomato and pepper pastes, and spices. Stir well. Take 1-2 ladles of the soup and mix it into the sauce, then pour the sauce back into the soup pot.

4. Stir the soup and let it simmer together for 1-2 minutes. Add salt to taste.

5. Finally, blend the soup briefly (2 pulses) for a smoother texture. If you prefer it chunky, you can skip this step.
