Looks good – what all is in there? What did the calories look like?
I like shredded or cubed parsnip (rather than carrot) as chili filler for that exact reason.

Bell peppers, my friend!
Load it up with like 3 bell peppers, 3 onions, big can of diced tomatoes, some lean beef and two types of beans!

Yes, carrots have too much of their own flavor to be used in large quantities in most dishes. You could try mushrooms, onions, peppers, kohlrabi, turnips, parsnips, etc. Also can serve over cauliflower rice. Occasionally, I’ll add lentils to my chili for even more protein. But I love chili. Personally, I also love corn in Chili.
Also, consider trying vegan (or beef, just a little higher calorie, I am not vegan) sloppy joes if you like sloppy joes. Mushrooms taste decent in that. Usually i food processor mushrooms, carrots, onions to give a better texture and use lentils. Homemade sauce pretty simple.
