Basbousa (Arabic: بسبوسه,), also known as Namoura or Harissa, is a sweet, syrup-soaked semolina dessert that is typically associated with cuisines of the Middle Eastern cuisine, Similar but slightly different dishes are also popular in the wider region. The semolina batter is baked in a sheet pan, then sweetened with rose or orange blossom-scented sugar syrup and typically cut into diamond (lozenge) shapes or squares.
