AUSTIN, TX — Whether you’re a seasoned plant-based eater or just looking to cut back on dairy, Chef Bai’s new cookbook, “Breaking Up with Dairy,” has something for everyone. With 100 delicious recipes, Bailey Ruskus, also known as Chef Bai, visited We Are Austin to guide us on a flavorful journey.

Chef Bai, a chef trained in classical French cooking, said her personal journey to becoming dairy-free was triggered by an endometriosis diagnosis that compelled her to go back to school for nutrition and overhaul her diet.

“I really wanted to find a way to have your cheese and eat it too, so to say,” she explained. “I knew I wouldn’t be able to go dairy-free unless I could still enjoy all of the things that I absolutely loved and do it in a way that’s really simple and easy,” Ruskus said.

The cookbook offers a variety of recipes that promise to be both satisfying and simple to prepare. “It’s all about using pantry ingredients– ingredients you can easily find at the grocery store,” she added.

Chef Bai demonstrated one of her favorite easy-to-make-recipes, Amaretto Coffee Creamer, showcasing just how easy it is to whip up something that’s dairy-free.
