Ingredients
For the Dressing:
100 ml (1/2 cup) extra virgin olive oil
20 ml (1 tbsp) white wine vinegar (or vinegar of choice)
30 ml (2 tbsp) lemon juice
1 tsp garlic powder
1 tsp dried oregano
1 tsp dried basil
1/2 tsp salt
1/4 tsp black pepper
2 tbsp Dijon or hot mustard
200 g (7 oz) Greek yogurt

For the Salad:
350 g (12 oz) farfalle pasta (or pasta of choice)
250-300 g (9-10 oz) cucumber, diced (if using organic, no need to peel)
230 g (8 oz) cherry tomatoes, halved
1 small red onion, finely sliced
150 g (5 oz) mixed green salad (such as lettuce mix + arugula)
Salt to taste
70 g (2.5 oz) Kalamata olives, pitted and halved
180 g (6 oz) feta cheese, crumbled

Prepare the Dressing
In a medium bowl, whisk together olive oil, vinegar, lemon juice, garlic powder, dried oregano, dried basil, salt, and black pepper.
Add mustard and mix well until fully incorporated.
Stir in Greek yogurt and whisk until smooth and creamy.
Cover and refrigerate while you prepare the salad.

Cook the Pasta
Bring a large pot of salted water to a boil.
Cook the farfalle pasta according to the package instructions until al dente.
Drain the pasta and rinse it under cold water to stop the cooking process and cool it down. Set aside.

Assemble the Salad
In a large mixing bowl, combine the cooled pasta, cherry tomatoes, cucumber, red onion, and mixed greens.
Season with salt to taste and toss well.
