Mediterranean Vegetable Soup and Sharing My Personal Story

Ingredients:

1 Tbsp EVOO + more
1 (8oz) container mushrooms, sliced
1/2 tsp each thyme, marjoram, paprika, oregano and black pepper
2 cups kale, chopped
1 medium onion, diced
1 cup celery with leaves, chopped
2 cups carrots, peeled and chopped
1 medium zucchini, diced
2 cloves of garlic, minced
1/2 cup lentils
1/2 cup chickpeas
1/2 cup tomatoes, chopped
1 – 2 containers of vegetable broth, low sodium preferred
1 tsp vegetarian bouillon
Fresh lime juice (optional)
Parmesan cheese grated (optional)

Using a Dutch oven or heavy bottom pot over medium heat, add 1 Tbsp oil, mushrooms, and all spices. Stir well, cover and cook for about 5 minutes. If pot is dry, add a small amount of oil to mushrooms, add garlic and all chopped vegetables, stir, cover and cook for about 8 minutes.

Add tomatoes, chickpeas, and lentils. Stir together then add vegetable broth and vegetarian bouillon (if using). Increase heat to bring to a boil, then down to a simmer for 15 – 20 minutes until vegetables are tender. Squeeze fresh lime juice. Serve in bowl and finish off with more lime and cheese. Enjoy!

  2. I quit smoking in 2003. So, congrats!! Many people don't like the mouth feel of mushrooms, but don't mind the taste. Chopping them very small can make them edible to those folk. I have found that I prefer pureed soups–split pea, squash, carrot, cream of tomato, etc. And fruit soups in the summer–those cold soups are divine when it is 80+ degrees. Dill pickle soup is one exception!

  9. Hi Sis, Your soup looks delicious. The Mediterranean diet is so healthy. Thank you for sharing about quitting smoking. It is a difficult thing to quit bad habits. You are doing a wonderful choice using the Mediterranean diet.
    Some of the spice bottles today have rather large holes, thus difficult to control amount when shaken. Lol! I like cooking my mushrooms like you did too. Gives alot of flavor. Keep up the great work my friend!❤😊🥰
