My first thought is ‘how the fuck?!’
My second was how many times I was showing someone new how to use the Hobart, and warning them to never stick their hand in to feel the dough no matter how quick they thought they could be.
They always had to learn the hard way though.

I was told by the Hobart guy those hooks are like $400. He also said don’t get a new one, look for the old ones unless you wanna size up beyond your intended use.

Bagel dough? High-protein flour gets super stiff and can break dough hooks.
As an aside I find it MUCH harder to find parts for older (20+ years) mixer gearboxes. We have to rebuild ours about every 15 years.

That sucks. One of my Dishwashers broke a paddle attachment for a 60qt in half when she dropped it at just the right (wrong) angle. That’s when I learned why the stainless ones are so much more ridiculously expensive than the aluminum ones.
