Iranian Style Baba Ghanoush!
I saw this recipe on Facebook and loved it, but I made a few changes to create my own version, it’s really delicious
Ingredients:
• 1 large eggplant
• 1 large onion, sliced
• 2 tbsp sour cream
• 1 tbsp tahini
• 3 tbsp olive oil (for sautéing)
• 8 cloves garlic, minced
• 1/2 tsp each: turmeric, cumin, black pepper, coriander
• 1 tbsp dried mint
• 1 tbsp chopped parsley
• Juice of 1/2 lemon
• Salt to taste
Garnish:
• 3 tbsp olive oil
• Juice of 1/2 lemon
• 2 cloves garlic, minced
• 1 tbsp parsley
• 1 tbsp sour cream
Instructions:
Char the eggplant over an open flame until blackened and soft. Peel and mash.
Sauté the onion in olive oil with salt until golden, then add garlic and cook for 2 more minutes, add in the spices.
Add the eggplant, 1 tbsp sour cream, tahini, 1 tbsp parsley, and lemon juice, cook for 5 minutes, stirring.
Spread onto a plate, drizzle with the olive oil mixture, and top with sour cream and sprinkle more parsley.
Adjust the seasoning if needed.
Serve with pita
bread, veggies, or grilled meats.
