In a world where many pale imitations are called ‘pies’ (I’m specifically looking at you here ‘ladle of stew with puff pastry dropped on top’) it’s good to see a proper, honest to goodness, looks absolutely banging PIE!

I’m afraid I don’t know any of the weights for anything because I just did it to my own taste.
Fry off shallots with salt and plenty of cracked black pepper to taste. Add good quality stewing steak. Slow cook In beef stock. Add a glug of beer or red wine if you like. When it’s nearly tender, crumble black pudding and Stilton into it and let them melt into the mixture. I added a spoon of caramelised onion chutney into it too but I don’t think it was necessary really.
When everything is tender and incorporated, add a little bit of Gravy browning to thicken the mixture. You want it to be quite thick and chunky. A bit like dog food. You can always add more Gravy later.
Fry off chunks of black pud. Not for too long because it’ll break up. Gently stir that and chunks of Stilton into the mixture. Optionally, leave the stilton till the end and layer it on top before placing the pastry lid. I wish I’d have done that.
It’s all down to personal taste as to how much of anything you put in. I love those kind of flavours so obviously I went all in with Stilton and Black pud.
Load everything into your pastry cases, Add more Gravy to fill in the spaces.
The wash was egg yolk and a tiny drop of liquid browning to make it nice and dark.
I don’t remember how long how long I Baked it for but it felt like a lifetime. Smelt so good.

Banging lad! Can I ask how you made the pastry? I attempted a pie 2 weeks ago and the pastry tasted dry and more under cooked. From your side pic, this looks pop on.
