Part of the restaurant’s updated menu features 15 new items emphasizing fresh ingredients.

MINNEAPOLIS — Red Cow is ready to celebrate the holidays!

The Minneapolis-based restaurant is bringing back the Red Nose Room at its Uptown location, decorating the restaurant for the holiday season and offering a special holiday menu with themed food, cocktails and mocktails through Dec. 31.

In addition, Red Cow is introducing 15 new items to the menu, with an emphasis on fresh, lighter items using fresh ingredients. The menu includes items like Lettuce Wraps, Hummus, Onion Rings, Baja Chicken Bowl, Steak Frites, Cubano Sandwich and more.

Chef Adam Lerner showed KARE 11 Saturday viewers how to make one of the new menu items: Red Cow’s Mediterranean Steak Bowl.


Mediterranean Steak Bowl

Quinoa, Coom 1 CupSteak, Thinly Sliced 4 OzShawarma Marinade 1 TbspRed Onion, Mandolined, Thin 2 TablespoonsBaby Cucumbers, Mandolined, Thin .5 CupBaby Tomatoes, Quartered .5 CupLemon Juice 1 TbspSalt 1 Pinch

Shawarma Marinade 1 TbspTahini Yogurt 2 TbspFeta 1 TbspMint, Picked 8 LeavesCilantro, Picked 8 LeavesButtered Naan 1 Each

1. In a pan on high heat, lay down a dash of oil and place the steak in. Season lightly with salt and move around, getting a good sear on all sides. Should cook in about 1 minute. Once cooked, add 1 Tbsp of shawarma sauce and place to the side.

2. In a mixing bowl, mix cucumbers, onions, tomatoes, lemon juice, and salt. Set aside.

3. To assembles, grab a black bowl and scoop the quinoa in the center.

4. Pour the steak and sauce from the pan over the top of the quinoa.

5. Squeeze the tahini yogurt over the steak

6. Evenly spread out the cucumber salad over the top.

7. Finish with 1 more drizzle Tablespoon of shawarma sauce, feta, cilantro, mint, and a toasted naan.
