  1. We were walking through Lowe’s and happened to notice a Classic Joe I on clearance. For $350 and a lifetime warranty the wife and I are quite happy to replace our $50 Mr. Bar-B-Q. We still need to do some reading on how to actually use it, although definitely and unexpectedly thrilled.

    Nice, that’s a pretty sweet upgrade you got yourself. Enjoy learning the versatility of Kamado style grills. Start simple using it as a grill, so you get the hang of lighting, temperature control and shutting it down. When you feel comfortable do some smoking, then whatever takes your fancy.

    cold smoking to smoking to grilling to pizza. Well done. You can also bake bread in it, make chili, meatloaf, etc. get lump charcoal and smoke chunks. If it has the disk with holes in it at the bottom but a charcoal basket and pull the disk. She’ll breathe much better. Wait 4 years and get a joetisserie and then kick yourself for not splurging way earlier. I hated charcoal grillin and my KJ II classic was my covid $1400 experiment. Love that thing!

    ++ on the Kick Ash basket. I like the Kick Ash Can, too. Better than the tray KJ gives you, and even better airflow.

    If you like pizza, get the pizza stone. Best pizza I’ve ever had.

    The swivel chimney cap you have works, but it’s not very good. Hard to adjust and tends to flop when you lift the dome all the way. Replace it with the updated KJ version or, better yet, the stainless one from SmokeWare.

    I’ve had my Classic 1 for over 10 years and only got a Joetisserie this past year. Waiting so long to buy it is one of the few things in life I really regret! Awesome for chicken, turkey and roasts. You can do great wings and flat cuts of meat with the basket kit.

    Don’t buy the Slo-Roller. Most of us here don’t think it works very well or makes things worse.

    Be sure to use good quality large lump charcoal, not briquettes. You can reuse whatever doesn’t burn. Jealous Devil is my preferred brand. Fogo is good, too. Buy it at a store if you can. Less handling. When it’s shipped to you (e.g., Amazon), the odds are that the bags have been thrown around a lot and you end up with a lot of small pieces and dust at the bottom of the bag.
