RECIPE:

* Your favorite Fish Filets

* Finely Chopped Pecans

* Fresh Grated Parmesan Cheese
(If you need to cut costs the Kraft Grated Cheese works too!)

** Equal Parts Pecans and Shredded Cheese

Salt & Pepper

Olive oil and Butter

One Egg

Instructions:

– Beat Egg white until light
– Dip fish filets into egg white
– Combine Pecans and Parmesan
– Press Pecan/Parmesan mixture into both sides of fish filets.

Heat a skillet over medium heat. Add olive oil and a tablespoon of butter to skillet. Enough to make about 1/4”-1/3” deep.

Add fish filet. The oil should just be bubbling gently around edges. If your heat is too high the pecans will burn and taste bitter!

Gently use two spatulas to turn fish when lightly browned on one side. Cook until the filets are golden brown. Remove from oil and serve immediately.
