Lemon juice can sometimes brighten it Or make it look worse but taste better w balsamic vinegar on the side

I’m wondering if maybe it’s a lack of nuts or cheese? I find blending with parm & pinenuts really helps brighten up the green !
Edit: I have made nut free pesto and have no issues keeping it green with proper amounts of garlic, parm, & olive oil. Making sure to blend into a creamy consistency is key too! And to add a bit of extra green, try a handful of arugula or spinach 🙂

Are you over processing the basil/pesto? Could it be getting whipped a bit too much and the air is oxidizing the pesto? We make it, and seal it immediately after making in an air tight container. The top darkens like this but underneath is green.
