Fluffy & Moist Oat Apple Cake with Blueberries
A delicious and healthy oat-based cake that’s firm, fluffy, and naturally sweetened with maple syrup!
Ingredients:
• 170 g oat flakes (gluten-free) (1 ½ cups) (lightly ground for a balanced texture)
• 140 ml hot water (¾ cup minus 2 tbsp) (adjusted for firmness)
• 3 eggs (for better structure and fluffiness)
• 45g maple syrup (2 tbsp)need more up to 60 g
• 1 tsp vanilla extract
• 150 g yogurt (⅔ cup) (extra to replace butter)
• 1 apple, grated or finely diced (for moisture and natural sweetness)
80 g frozen blueberries (2.5 oz) (do not thaw to avoid excess liquid)
1/4 tsp salt
• 1 tsp baking powder (for a good rise)
• ¼ tsp baking soda (reacts with yogurt for extra lift)
