Sounds about the same time of a sourdough cold rise I’ve read about a while ago. How does it taste? Is it chewy?

I saw this and asked my husband about the bread dough I put in the fridge last night that he was supposed to bake this morning. Apparently, it’s still on the counter.

I made the tastiest loaf I’ve ever done by leaving it in the fridge overnight, then taking out and bringing to room temp and then getting distracted and putting it back in the fridge for another day and then taking it out again for several hours and almost forgetting a second time before I finally tossed it in the oven. Yeast is gonna yeast, not sure how but it worked out so so well. Rich and complex and tasty, crust was like a cracker it was great.
I wish I could do it again but I’ll never be able to because I wrote f*ck all down about time and temp

So when you overnight proof like OP who did it for 72 hours,
Do you bring it to room temp when taking out to shape?
Then do a 2nd proof then bake?

I purposely leave mine in the fridge for anywhere between 2 to 6 days.
The best tasting bread I’ve made was from a dough that was on the fridge for a week.
