
Made this tonight I think it’s my best batch but the people here look at way more pasta than I do so I’m looking for my feedback. Homemade spaghetti with semolina and tipo 00 and the butcher didn’t have any guanciale so I used pancetta. It was really yummy

The spaghetti look good but your sauce seems cooked and there’s not enough. I cannot see the pancetta. And clean your flat

The fun part is figuring out whether the black spots is black pepper or cigarette ash
