Finally managed to get some good flour and made some pizzas last night.
This was just the first one.
Direct dough, 73% hydration.
Tomato sauce, guanciale, parmigiano, basil and black pepper.
Remember, cornicione needs to be light and empty, otherwise it's bread and not pizza 😉

Which flour? And I can just tell it’s airy by looking at the first pic! Well done
