I did put mustard on top of each burger before flipping and I really feel like that makes a good difference in flavor.

Alright. I have no notes on the final product. That looks perfect.
But a question about the step when you smash the onions into the burger.
I’m used to placing the round patties on the griddle, smashing them down just a little, only to make a bit of flatness, and then piling a bunch of slivered onions on top, then smashing everything down fully with the onions on the top side. Then I let the beef sear, then flip, so now the onions are below, against the griddle with the beef on top.
Have you tried it this way too? Do you see an advantage of smashing the beef with onions on the bottom (no homo) first, over my method described above?
Genuinely want to know. Im always looking to improve.

Looks like a banger to me. It is amazing how good they are with nothing but cheese on them. I also do the onion on top to start but I am sure you didn’t throw the earth off axis doing it that way. Try both and see which one you like better. Cheers.

pro tip i learned from a fat guy on youtube – super thinly slice your onions, throw them in a bowl and toss with a bunch of kosher salt. Stash in fridge while you prep everything else and when you’re ready pull them out and squeeze all the water you can out of them. The flavor comes out so delicious and concentrated when you smash them into the burger.
