Huli Huli Chicken – Hawaiian BBQ Chicken!

Ingredients:
– 2 lb boneless chicken thighs
– 2/3 cup soy sauce
– 1/2 cup brown sugar
– 1/3 cup ketchup
– 1/3 cup water
– 1/3 cup rice wine vinegar
– 2 to 3 cloves garlic, minced
– 1/2 inch ginger, minced
– Kosher salt

Method:
– Place chicken thighs in a bowl and add a couple of pinches of kosher salt, mix
– If using an oven, preheat to 425 F
– Mince garlic and ginger
– Mix all ingredients (except chicken) in a separate bowl and whisk until combined
– Pour marinade over chicken and mix
– Let marinate for at least 15 minutes, or up to 24 hours
– Place chicken over coals on a BBQ, or on a wire rack on a sheet tray in the oven
– Rotate and flip every 2 to 3 minutes, adding a small amount of leftover marinade to baste chicken each time
– Cook until starting to char, and internal temp is at least 165 F; however, for chicken thighs, I like to cook until about 180 F
– Pull and let cool, slice into strips
