Smoked at 250 on a pellet grill to 130. Rested then seared. Delicious.

  1. Looks solid. I might have gone a little high on the heat, like 275 or cranked the heat up a bit at the end there. Or you could even do the reverse sear thing after you pulled it and throw it in a hot pan with some beef tallow for a couple minutes, just to get a nice crust on the outside.

    Either way it looks like it came out pretty good.
