Creamy Red Pesto Pasta π₯π

Ingredients:
200g pasta (any kind you love! π)
1/2 cup sun-dried tomatoes ποΈπ
1/4 cup roasted red peppers πΆοΈπ₯
1/4 cup almonds (or pine nuts if you prefer!) π°
1-2 cloves garlic (depending on how garlicky you like it! π§)
1/2 cup parmesan cheese π§
1/4 cup olive oil π«
1/4 cup heavy cream π§΄ (or coconut cream for a dairy-free option! π₯₯)
Salt & pepper to taste π§
Fresh basil leaves πΏπ
Optional: chili flakes for a spicy kick πΆοΈπ₯
Instructions:
Cook your pasta! ππ¨
Boil your pasta in salted water according to package instructions. Drain, saving a cup of pasta water! π§βπ³
Make the red pesto sauce! π

In a food processor, combine the sun-dried tomatoes, roasted red peppers, garlic, almonds (or pine nuts), parmesan, and olive oil. Blend until smooth! π
Cream it up! π§΄π₯
Pour in the heavy cream and blend again until creamy and well mixed. Add salt, pepper, and chili flakes (if you want some heat) πΆοΈπ₯!
Mix it all together! πβ€οΈ
In a pan, add the pesto sauce and toss in your cooked pasta. If needed, add a little pasta water to get the sauce to your desired creaminess. Stir well! π½οΈβ¨
Garnish and Serve! πΏπ½οΈ
Top with fresh basil leaves πΏ and extra parmesan for extra cheesy goodness π§! Enjoy your creamy, pesto perfection! π
Optional Tips:
