Second time using my crockpot, as I’ve historically only used an instant pot. I also don’t know what I’m doing here for this St. Paddy’s corned beef roast (I added brown sugar and a guinness as some people suggested) but I’m hoping for the best! 🍀

    THe brown sugar is unnecessary but won’t hurt things, and too late now.

    Otherwise, looks great! High or low? Carrots/potatoes going in later?

    Okay so if you guys are open to conversation here; I was growing tired of bland potatoes and cabbage. Its just not appetizing coming out of the slow cooker. I now slowcook the beef with spices for four hours alone and then finish in the oven to give a nice texture. I make Colcannon and some veggie for a side. I know its not the traditional corned beef and cabbage but its soooo much better. Serve with mustard

    I’ll give a slight tip if you’d like! I’m irish,Scottish, and Italian, my celtic family adds the cabbage coarsely chopped in for the last hour to have it keep more texture than cooking it with the roast the whole time.
