Delicious Greek-style souvlaki with halloumi cheese, roasted eggplant, tomato tapenade and tzatziki sauce.

Ingredients (4 servings):
– 4 Greek-style flatbreads
– 1 eggplant
– 2 tbsp balsamic vinegar
– 2 tbsp brown sugar
– 2 tbsp olive oil, divided
– salt, black pepper
– 1 tsp dried oregano
– 225g (8oz) halloumi cheese
– 1 red onion, sliced
Tzatziki sauce:
– 1 cucumber
– 500g (2 cups) Greek yoghurt
– 2 large garlic cloves, minced
– 1 tbsp lemon juice
– 2 tbsp olive oil
– 2 tbsp fresh dill, chopped
– salt
Tomato tapenade:
– 120g (4.2oz) sun-dried tomatoes
– 2 tsp capers
Roast eggplant for 15-20 mins at 180C (360F).
Bake halloumi for 10 mins at 180C (360F).
