
Being a first time user of lye, I was sure I was going to melt my face off or something dramatic tonight.
But alas, face is still here and just as ugly as before I made the pretzels.
Wife has something tasty to come home to tonight!!

They are so easy right?! Made my first a few months ago. Beautiful job!!
Personally I like to just take baking soda on a tray baking it at 309 for like 8 minutes and then using that as my base. This makes me feel safer and it is wildly less caustic but not entirely
Okay these look delicious. Better than any pretzels I’ve done.
What recipe did you use and what’s your secret? My dough always seems to come out fine but getting my actual pretzel shapes to hold without shrinking is my problem.

Lye is not anywhere near as scary as people talk. People also say you can get the same with baking soda or sodium carbonate but I’ve tried them all and you really can’t. Lye is way more basic and really gives a certain color/flavor/texture that you’re not getting from the weaker stuff.
Was it easy enough to do all over again?
