    Gotta say, as a former bartender, I was probably the worst at ringing food in a timely manner. Fucked up a bunch but the crew always managed to get it together and save my ass. I was the one missing something once in a while but I was also the one making beer and whiskey cocktails in plastic to-go containers for shift drinks and bringing a dab pen. We had a good relationship!

    “Can I get that chicken on the fly?” Can you deal with it having pink on the inside?

    “Can I get that well-done steak on the fly?” Can you deal with it being medium rare instead?

    It has to cook. If I had a “get it done instantly” button I’d use it every time.

    My favorite is when they forget to ring it up or mess an order up then without telling us ring it up right and put “on the fly”. Then they come back two minutes later saying they put on the fly and asking why it’s taking so long. Some of these servers think putting “on the fly” makes the food cook faster.

    A servers first action is tell the manager. Let him on the fly that, and he’ll let the guest know your’e a little backed up, and can we get you anything else while the kitchen catches up. See?

    Who trusts a server to pave their own tables? Sous needs to be on expo asking servers where they’re at bc they know the cook time and how quick his crew is.

    Servers take turns with communal brains. Only 1 sometimes two can be on at the same time.
