Appellation Lodi Wine & Roses Resort and Spa is undergoing a stunning transformation, set to redefine luxury, dining, and hospitality in California’s wine country.
A remarkable transformation is underway at Wine & Roses, ushering in a new chapter for this cherished wine country retreat. Set to open as Appellation Lodi – Wine & Roses Resort and Spa in late spring 2025, this revitalization is a collaboration between owners Russ and Kathryn Munson and Appellation, the culinary-driven hospitality brand co-founded by renowned chef Charlie Palmer and luxury expert Christopher Hunsberger. The resort will remain open during the phased renovation, offering stays, dining, and spa experiences, with the full transformation expected to be completed by late spring 2025. This marks Appellation’s debut operational hotel, with additional properties in development, focusing on California’s emerging wine regions.
A Rebirth Honoring Legacy and Celebrating the Future of Lodi
The ongoing renovations respect the hotel’s rich heritage while incorporating Appellation’s culinary-first philosophy. This vision extends beyond dining to include the design, botanical and culinary gardens, public spaces, and unique programming. Appellation and Wine & Roses aim to celebrate the past while redefining Lodi’s hospitality landscape.
When the resort’s redesigned accommodations are unveiled, guests will experience a deep connection to the region’s agricultural roots. The interiors will blend light oak furnishings with handcrafted textures, creating a welcoming, artisanal ambiance. Colors inspired by the surrounding landscape—harvest and eucalyptus greens, cognac, and honeyed oranges and yellows—will bring the outdoors inside. Many rooms will feature custom-designed textures reflecting the vineyards and fields, creating an authentic, warm atmosphere.
A New Culinary Vision Rooted in Lodi’s Wine Country
A revitalized culinary program will be a cornerstone of Appellation Lodi – Wine & Roses Resort and Spa, guided by Michelin-starred Chef Charlie Palmer, Chef Thomas Bellec (Appellation’s Chief Culinary Director), and Executive Chef Marco Fossati. The program will feature two signature Charlie Palmer dining concepts, with a complete reimagining of culinary landscaping and programming.
The first phase of the transformation, Maison Lodi, debuted in February 2025, bringing French bakery craftsmanship to Lodi. This new space, formerly Towne Corner Café & Market, offers fresh breads, pastries, and rotisserie-roasted chickens, in collaboration with Healdsburg’s Quail & Condor Bakery. The menu also includes seasonal salads, artisan sandwiches, and marketplace items—all prepared fresh daily using local ingredients in a modern, farmhouse-style café with an open kitchen.
The Towne House Restaurant will evolve into Americana House, retaining part of its original name to honor its history as the hotel’s first building. This redesigned concept will stay true to Chef Palmer’s Progressive American Cooking, focusing on seasonal ingredients and the region’s rich bounty in a refined, approachable atmosphere. Americana House will feature a dedicated cheese aging cabinet, maturing both in-house cheeses and selections from Lodi and Northern California. A wine decanter station will encourage culinary exploration, spotlighting seasonal wines.
Guests will also be invited to engage with chefs at a culinary counter, enjoying small bites, wine tastings, and exclusive menus. The restaurant’s design will feature warm wood, harvest-inspired tones, and brass, copper, and bronze accents, with an inviting outdoor seating area surrounded by greenery.
