Incredible meal in CEBO today, this restaurant was taken over by two of Spains most up and coming chefs Javier Sanz and Juan Sahuquillo( Forbes 30 under 30 202) they already had a star in their other restaurant, Oba, and last night won a second "repsol star" ( Spanish version of Michelin) for CEBO.

On Saturday I ate in 2 star Deessa (big Quique Dacosta fan) and it was great, but I think this blew it out of the water a bit. Some highlights of a 16 course meal (not commenting on them all😂)

1)starting off in the bar with welcome drink, and 3 snacks, all based on anchovies.. All incredible

2) missing a few photos here, before sitting down we pass by a counter, where a chef shows us 4 different boxes, of all the produce they'll use during the meal, and serves us two snacks more, heavily based on black truffle. Incredible.

3)spanish ham, jamón de bellota, The best there is, 3 snacks, including the croqueta they won first prize for in Madrid fusion a few years ago.

4)conserved tomato, served with goats cheese, and a bloody Mary, incredible.

5)razor clams, marsh frost 😂can't remember exactly what that was but it was incredible.

6)shrimps and clams

7)smoked sturgeon and caviar

8)cococha (cod neck) and peas

9)squid with an Iberian ham sauce. Incredible

11 & 12)the famous Denia Prawn Quique loves, and we had it in Deessa on Saturday, here it's cooked in chorizo butter incredible, while Quique still cooks his in seawater

13 & 14)alfonsio fish, somehow cooked in 3 textures ( I was explained how, but can't remember😂)

15)incredible dish, second last of the courses before dessert. Rice with a goat sweet bread

16) duck with a few other things going on

19)petit fours made at the table, all influenced by dried fruits, incredible.

All in all, an incredible experience, the location is amazing inside a 5 star Hotel, the restaurant is amazing, with loads of spaces between tables, and incredible music, and really helps you relax into the experience. Of any star level, this is as good as I've had almost, I'd expect big things for this restaurant in the future, it won its star after only 2 years, and I think it'll go a lot further.

    I should add it’s one star and in Madrid! And that should say Forbes 30 under 30 list 2024!

    Nice! Dined there a couple of years ago when the pair took over and it was phenomenal. Still my group’s favorite fine dining anywhere… I liked it even more than Noor*** (which I loved nevertheless), and found that despite being in a more formal setting CEBO was as genuine as the super hot 10-seater Baga* (which I also loved).
