Ring with a diameter of 18 cm (7 in). Acetate ribbon (can be replaced with a document file). Cheesecake – 1900 grams.
Ingredients: ☑️ 250 grams of Chocolate cookies, I used gluten-free with a sugar substitute, you can use any kind you have ☑️ 100 grams of Butter ☑️ 500 grams of Cottage cheese ☑️ 150 grams of Sour cream ☑️ 400 ml of Cold heavy cream (35% fat) ☑️ 80 grams of Sugar substitute, I used Stevia or 200 grams of sugar ☑️ 2 grams of Pure vanilla extract ☑️ 25 grams of Lemon juice ☑️ 25 grams of Powdered gelatin plus 120 ml of cold water for soaking
Ingredients for blueberry jelly: ☑️ 120 grams of Blueberries ☑️ 2 grams of Blue food coloring, I used Blue Spirulina, you can replace it with any other food coloring ☑️ 600 ml of Sweetened water with lemon juice to taste, I used Stevia, you can replace it with sugar ☑️ 20 grams of Powdered gelatin plus 120 ml of cold water for soaking

Instructions:
Crush chocolate cookies into fine crumbs and mix with melted butter. Press the mixture into the bottom of an 18cm (7 in) springform pan lined with acetate film. Refrigerate.
Soak 25g gelatin in 120ml cold water for the cheesecake filling.
Mix cream cheese, cottage cheese, and sweetener until smooth. If needed, add a bit of cream to help blend.
Whip the heavy cream separately until stiff peaks form.
Heat the bloomed gelatin in the microwave in 10-15 second bursts until liquid. Mix into the cheese mixture.
Fold the whipped cream into the cheese-gelatin mixture gently.
Pour the filling into the pan, shake to remove air bubbles, and refrigerate.
For the jelly, soak 20g gelatin in 120ml cold water.
Prepare the sweetened blue water with lemon juice and food coloring.
Place washed and dried blueberries on top of the set cheesecake.
Heat the bloomed gelatin for the jelly until liquid, mix with the blue water.
Pour half of the cooled blue jelly over the berries. Refrigerate for 5-10 minutes.
Reheat remaining jelly if needed, cool to room temperature, and pour over the rest of the berries.
Refrigerate the cheesecake until completely set.
Remove from the pan, peel off the acetate film (wipe with hot damp cloth for easier removal).
