Cool, but A. You still have to give us actual notes on the wine, and B. There’s no universe in which the flavor of the tacos didn’t at least slightly bully the flavor of the wine, so how was the pairing in general? I’m all for combining expensive wine and inexpensive food, but this still seems like a slightly irreverent pairing at best

In general wines are very polish, in the fruit, balancwe between alcohol , tannins and acidity, this thanks to the biodynamic practices in the chateau and other elements. It was a really balanced high end wine. One of the key factor of the tacos was the fat in them, and we didn’t over use salsa, and we tasted them with and without. In my opinion I prefer the ones without salsa for this specific wine. The key ingredient was the fat. Now this tacos are not cheap, beyond the price point they are very well balanced, the quality of the corn and the meat played very well with the wine. As long as you find the balance between the tannins and the fat your result will be a good match.
