Venison is less safe than beef to eat rare. You are taking a small risk doing that. I would not take that risk personally. But you’ll probably be fine.

Perfect for me. Looks great. My wife won’t even eat deer she might fight me for an elk steak though. I got half an antelope and she seems to be digging the speed goat but it’s a work in progress. Also wierd she won’t eat any birds I bring home pheasant, quail, duck, goose none of it. At least I got the dog to share with she did half the work anyway.

Perfect looking steak. Is that a Shun? If you like Japanese inspired knives, you should try and ditch the Western style handle, see how ya like it! Longer D turn petty knives are great for in-service station work (slicing, last minute veg cuts, emergency herbs or brunoise alliums).

If it was beef steak id be happy with it. Is it game version or farmed venison, as wild game can have a ton of parasites, so it’s not just about the cook but also making it safe to eat (farmed beef being safe in most cases to eat tartare)
