Ingredients
For the sandwich:
• 1 hot schiacciata or focaccia bread
• 150g mortadella, thinly sliced
• 100g stracciatella cheese
• 20g pistachios, chopped
For the pistachio sauce:
• 40g pistachios
• 80g fresh arugula
• 1 garlic clove
• 60g olive oil
• 40g Parmesan cheese, grated
• Salt, to taste
Instructions
1. Prepare the pistachio sauce: In a blender or food processor, combine pistachios, arugula, garlic, olive oil, Parmesan, and salt. Blend until smooth, adjusting consistency with a bit more oil if needed.
2. Assemble the sandwich:
• Slice the warm schiacciata or focaccia in half.
• Generously spread the inside of the bread with pistachio sauce.
• Layer the thinly sliced mortadella over the sauce.
• Spoon the stracciatella cheese on top.
• Sprinkle with chopped pistachios for added crunch and flavor.
3. Finish and serve: Cover with the top half of the bread, press gently, and serve immediately while warm.
