day 1 of my Lenten Series: LAGANA

Clean Monday, or Kathara Deftera in Greek, marks the start of Great Lent. It’s a day for making and enjoying Lagana, a unique flatbread made with simple ingredients like flour, sugar, water, and yeast.

Ingredients:1 ½ cups lukewarm water1 teaspoon honey2 teaspoons active dry yeast4 cups bread flour (500 grams)2 tablespoons olive oil (optional – you can skip the oil and rub the dough with a little extra tahini or use a light coating of flour on the bowl for rising if avoiding oil)1 teaspoon salt2 tablespoons tahini (for a slight taste)
For the topping:2 tablespoons warm water1 teaspoon honey or sugarSesame seeds (for topping)Sea salt (for sprinkling)
