Made Pain de Mie yesterday using Maurizio Leo’s recipe in The Perfect Loaf! I forgot how much I missed soft bread. The mild sourness of this bread melds perfectly with the butter, and the crumb is pillowy soft. Give it a shot! It’s a nice reset 🙂 The recipe can also be found here:

    In terms of process, I followed his recipe exactly, although next time I might attempt a cold proof instead of a same-day bake. I found that this bread ended up being a whole-day process, which I’m not a fan of.

    I love making sammie style sourdough. Easier to make sandwiches with, actually sell more of this style

  8. For loaf pans, how long do you preheat the oven? I’m assuming you do not preheat it with the pan inside like a Dutch oven?

    FYI, if you hate crusty bread, the answer is more steam and storing said loaf in a glad bag!

    Or, you know, just crushing a loaf while it’s still warm. 🙂

  12. I use my discard every week for sandwich bread and bagels! Love the added nutrients, fiber and probiotics, plus, it’s so much more useful throughout the week than a crusty loaf.

    The active starter can make sandwich bread, too. Overnight levain with some stretch and folds in the morning. After a good rise you have a loaf or two. So good!

    Edit: also makes great (and healthier) brownies, cookies, pizza, dough, granola, and more.

    I just made sandwich bread yesterday in my bread pan as well, it was DELICIOUS! My husband doesn’t want to go back to store bought.
