I have loved canned fish my whole life, and in the last few years I’ve started making it the theme of my birthday parties. People then gift me more cans for my birthday, and the cycle continues 🙂
This year I made:
1. Pastel de atún, Mexican sandwich cake frosted with a blend of tuna, roasted red peppers, cheese. The savory “frosting” goes between the layers of fluffy sandwich bread, and all around the outside. This is a common cake at kids’ birthday parties in parts of Mexico—it’s like the best tuna sandwich you’ve ever had, with the smoky, sweet flavor of peppers.
2. Smörgåstårta, Swedish sandwich cake “frosted” with whipped sour cream, and filled with Pacific bay shrimp, salmon, cucumber, and dill. Texturally similar to the above cake, but with a creamier, more fragrant flavor.
3. Tart with smoked salmon, peas, dill, Gruyère, on a whole wheat crust.
4. Tart with smoked trout, caramelized onions, goat blue cheese.
I also made (but forgot to take pictures of)… Malaysian sardine puffs (puff-pastry turnovers) filled with sardine curry, including sardines in tomato sauce, potatoes, onions, ginger, garlic, curry leaves, and lots of spices … Classic clam dip … Whipped cod liver … Sfincione, Italian focaccia topped with tomato, anchovies, and breadcrumbs.
