Veggie fried rice with is pretty amazing for how cheap and easy it is (it doesn't have too much protein but it's enough when you're not a body builder)
into a pan add some olive oil/
Vegetable oil or both, with 1 diced and a few chili slices optionally some garlic aswell, on the side start cooking half a cup of white rice. After you're happy with how the onion smells add in some mushrooms and layer some broccoli, cook all of that untill the rice is ready then add in the rice and 2/3 of a can of beans and some pepper. Add soy sauce and spices to taste (I used grinder cuminn, ginger powder and oregano) then stirr for a few moments and it's ready (2servings)

It’s good to make sure you eat high protein, and good fats. I’m a strength training vegan. The biggest mistake I made initially was eating too carb heavy. Even some high heat baked tofu, tempeh or seitan could give that a nice boost. Keep experimenting and good luck on the start of your epic plant based journey 🫡
