I love cheese. I love blue cheese. But I don't know what to do with 6 lbs that I got from the food bank. I'm not even sure how best to cut it. Do you kiddos have suggestions for me?

To preserve it, I suggest wrapping the opened pieces with plastic wrap. Tightly, with as little air inside or openings as you can.
Cutting it open can be a bit tricky if you don’t have a cheese wire, the Treasure Cave is a bit crumbly, so if you use a knife some pieces can break out.
That cheese is great for making blue cheese dip, mix it into mac and cheese, crumble it on a burger, have it with a little honey, jam. If you plan on cooking with it, you can freeze portioned amounts for the recipes too.

Make dessert with it. A small chunk of blue cheese, spread some orange marmalade over top then grate some dark chocolate over the whole thing. Be wary it is RICH!

The wheel, as a whole, unopened, can last several months. As you chip away at the wheel, it “refreshes” the date. After you cut a cheese, that new surface can last another couple monthes. You can crumbled that wheel for like half a year, just keep together, and scrape outside wheel mold (the mold that’s growing on outside of the cheese, not the mold that is already in the cheese.) They look different and you will be able to tell. Blue cheese mold is vein-like, the other mold that grows afterwards is puffy, and in a circular shape (you can just keep scraping these molds off if you want. It won’t make you sick, so you don’t have to, but it is kinda gross).
Shit lasts a while, but be weary it will start to leak. Blue cheese ages from the inside out, meaning the longer you have it, the more it will leak. Keep it in a large ziplock to prevent it from drooling all over your fridge.
