    For supremes, you can also use a food enzyme product called pectinase—no cutting involved! Just peel your fruit and give it time in the enzyme bath. Perfectly naked segments.

    Also per potatoes I also always thought that Robuchon was the King of the potato and I agree that using cold butter to make a mash makes a difference, I think that warm or melted butter has a different grease factor versus having that same ingredient in a more solid form melting into the starch, but it seems that each chef makes it their way haha.

  8. OMG!!!! My friend Jeff Resnick caught something we missed!!! There is a stock footage shot of someone spooning caviar but the problem is…..THEY ARE USING A METAL SPOON!!! You must NEVER use a metal spoon for caviar service or consumption because it SERIOUSLY affects the flavor of the caviar. Use a wooden spoon or the traditional mother of pearl spoon! Thanks Jeff!!!!

  9. Thank you for all the joy and your team share! My grandmother would quote the "rich man" line (originally from Gentleman Prefer Blondes?). She also said "Butchers have the softest hands." (And how do we know THAT grand-mère?) She survived WWI and WWII in Europe and spent the second part of her life caring for her family, neighbors and garden. I think about her every day and remember that desperate and hard times are survived by everyday people all the time. Caring for each other, doing the ethical thing and enjoying the beauty/food/music in front of us is always going to be a part of the solution. Take good care of yourself, you have thousands of internets strangers muddling along beside you.

  10. I believe Patricia Wells is still reviewing restaurants in Paris, at least on her website. I'm counting on her as I'm going to Paris in the fall and want to research her suggestions. I have a few of her cookbooks and use them frequently. Your aunt sounds like a real fabulous broad!

  16. I just came home from a dear friend’s memorial today and watched this video. There were so many wonderful friends and family at his memorial that made us happy to be together. I live a million miles from you in Coos Bay, Oregon, but I think you would have loved dear Richard and so many of the people there and they would love you too. ❤

  19. Love. Also, I have a bit of a weird ask. Would you ever consider attempting to create a version of the Tesco’s brand Almond Fingers? When I’d visit my mom in England, she would serve these with tea. My mom has since passed. I’ve looked into getting them shipped but that cost is a bit much from the UK to California. Anyway, no worries if not. Doesn’t hurt to ask. Thanks for doing what you do.

  20. Cold butter is the furtherest away from splitting into the fat portion and milk portion and will keep the emulsion you are making together. That's why it needs to be cold. …but smaller cubes

  21. Randy & DPT team, I have never commented on a Youtube video/channel before. I don't know if I can articulate how much you and your videos mean to me. I have also been going through some tough times and I am completely transported when I can watch your videos. Thank you so much for making DPT.
    I do have a question for you if you're still taking them…I remember on an episode you said we should never buy Domino brand sugar (and I haven't since I heard you say that). You may have covered this already and I missed it but is there a website consumers can look up to find out if common grocery store brands, like Domino, are moral, trustworthy brands that we can rely upon?
    I also live in the west village and I have a dream of one day seeing you on the street, pointing and saying "don't forget to…TIP! YOUR! FISH MONGER!… fish monger…fish monger!"!!

  22. I had the good fortune of being the Guggenheim event person working with Mrs. Cronson (as we called her) and helping with the Works & Process program that she created. She always felt it was essential that the audience be able to converse with the artists in the rotunda after the performance requiring a very modest reception of wine and bar snacks. Well – she provided not only the incredible talent but also the MOST delicious potato chips from the Carlyle Hotel kitchen. I never and still have not had better chips in my life- this woman knew the power of the potato and art. Thank you for this post and your unforgettable aunt.

  24. My dad painted the Guggenheim when it first opened. When he was in Mount Sinai hospital during his last days, I was reiterating this to one of the medical support staff. She misunderstood and asked me what works was he known for. I said that the Guggenheim was his canvas. 🙏🏽🤷🏾‍♂️🤪
