Having lived in València for a good while now, I've been a Quique fan, so during a trip to Madrid no better excuse to try his new 2 star restaurant there. Of the two menus, we went with the historic menu.. Restaurant is located inside the incredibly fancy (for me anyway) 5 star ritz hotel
1)the historic menu
they started us off inside the door at the chefs counter with a little apertivo, cocido Madrid. Was fine, nothing too crazy (no photo of this)
2)first dish was like a mackerel tartar with a fake ice tomato on top. Not bad
3) his version of creme brulee, but with papada ibérica, Iberian pork. Not bad
4) salmon remolacha type fish, fine also
5) things picked up massively from here to the end. His selection of caviar and cured fish. Excellent
6)Quiques version of a prawn curry, all that green foam on top literally had the full taste of a green curry.
7)dish of the day. Salmonete with 12 year aged parmesan, noquis and some incredible broth
8)one of Quiques famous rice dishes cooked in red pepper
9)velal sweet bread with a tagliatelle made from milk skin, and black truffle of course!
10)first dessert, more like a palate cleanse.
11) second chocolate dessert
12) photo missing of Quiques Denia Prawn, not on the menu, but brought out as a "surprise" just like in his Denia restaurant
Overall a solid experience! But I think CEBO might slightly have bettered it a few days later.
