I do this kind of omelette on toasts very often these days. I use this recipe as a base : https://elinestable.com/recipes/chickpea-vegan-omelette
but without turmeric, maple syrup, mushrooms… just chickpea flour, water and salt. Sometimes spinach or peas shoots and vegan grated cheese !

On my toasts (these are gluten free because I’m trying to see the effects of going gluten free on my endometriosis 🀭), I put some homemade mayonnaise and the omelette cut in half !
And some coconut buffalo sauce 😍😍

    That looks so tasty! Do you find that a non-stick pan is pretty essential to keeping it in one piece?

    Like soy milk, but cream. Any non dairy cream you like would do.

    My husband makes a similar pancake/omlette but with red lentils but will have to try chick peas like this. Thanks for the idea.
