I do this kind of omelette on toasts very often these days. I use this recipe as a base : https://elinestable.com/recipes/chickpea-vegan-omelette
but without turmeric, maple syrup, mushrooms⦠just chickpea flour, water and salt. Sometimes spinach or peas shoots and vegan grated cheese !
On my toasts (these are gluten free because Iβm trying to see the effects of going gluten free on my endometriosis π€), I put some homemade mayonnaise and the omelette cut in half !
And some coconut buffalo sauce ππ

Ooh! Youβve just given me inspiration to make one! I just picked up some asparagus yesterday and it would be perfect in one.
That looks so tasty! Do you find that a non-stick pan is pretty essential to keeping it in one piece?
This looks easy and awesome… but what is soy cream?
Like soy milk, but cream. Any non dairy cream you like would do.
My husband makes a similar pancake/omlette but with red lentils but will have to try chick peas like this. Thanks for the idea.
