This was the Friday night fish fry at 11:00 PM when we got home from smelting as a kid in Chicago(80’s). The bones are small so ya basically gut the thing and throw them in a pan. Delicious… Did them on the dock right out of the H20 on a coleman sometimes… (You use nets and a long line attached to an anchor when they spawn. You can get 30+ on one set if you time it right.). Tradition….

Looks similar to fried vendace! Except vendace are so small (1-2″), they’re fried whole. Same process off rolling the fish around in light breading and quickly scorching them in an oiled-up cast iron pan, though!
