If you're needing a high protein breakfast, here is my favorite scramble.

  • 1 pack tofu
  • 1/2 cup vegan mozzarella
  • 3 large kale leaves
  • 4 beyond sausage (or omit)
  • 1/3 package frozen hashbrowns (or from fresh)
  • 2 slices sourdough bread

Instructions:
– prepare kale and saute in oil with pinch of salt and pepper until crispy, and set aside
– cook hashbrowns and sausages per package instructions
– scramble
– firm press all moisture out of tofu
– get pan hot and add oil
– hand crumble tofu into pan
– season with salt, pepper, nutritional yeast, paprika or dash or chili powder, onion powder or garlic powder. Cumin or other seasonings as you wish.
– 1/2 tbsp hot chili oil for color and some heat
– continue stirring at medium heat, once cooked, fold in kale and mozzarella
– toast and butter toast
– plate

Obviously tofu scrambles are a dime a dozen on this site, but some hot chili oil and crispy kale is dank AF. 🫡 to my fellow plant based veg heads 💪. Let's get those biceps bigger than most carnivores, do you even lift bro?
