500g each of carrots, sweet potato, and brussel sprouts. 2 blocks of extra firm tofu.

I tossed the veggies in some olive oil and old bay and roasted it at 400°F for a half hour ish. Marinated the tofu in BBQ sauce and baked it the same way. Not sure what sauce yet but I'll end up topping it with some kind of sauce. First prep I've done in a long time so just jumping back in.

    While I’m not a fan of tofu, I mostly eat chicken.
    Walmart has store brand versions of several of the Buffalo wild wing sauces, several of them would probably go well on this dish. I believe they’re under $2/ bottle.
    Raspberry vinaigrette would probably be pretty good as well.

    Don’t undervalue yourself, that does look like something I’d eat with a good sauce to pair it with. Looks like a good amount of volume too.
