EASTON, Pa. – A popular, family-run dining establishment – serving up tacos, tostadas, enchiladas and other Mexican specialties – is expanding its footprint in Northampton County.
Mexico Lindo, offering authentic Mexican food at 720 Main St. in downtown Bethlehem, will open a second location this spring at 325 Cattell in Easton’s College Hill neighborhood, co-owner Jose Avila said.

Avila and his wife, Delia, have been operating the Bethlehem restaurant since 2009.
They’re excited to serve their homemade dishes, including entrees such as carne asada, chicken flautas and camarones a la diablo (spicy shrimp), to more individuals in the Lehigh Valley.
Like the Bethlehem restaurant, the Easton location also will operate as a BYOB establishment.
“We’re going to offer a very comfortable dining experience, just like in Bethlehem,” Jose told 69 News.

The new location will offer the same menu as the original location, Jose said.
Mexico Lindo customers can enjoy appetizers such as guacamole, nachos supreme (choice of beef or chicken) and tamales de pollo (green chicken tamales); tortas (Mexican-style sandwiches with mayonnaise, lettuce, tomato, avocado, jalapenos and cheese) such as marinated pork, breaded steak and chicken; and fajitas (served with rice and beans) such as shrimp, sirloin steak with Mexican sausage and “supreme” (shrimp, sirloin steak, chicken and marinated pork).
Other menu highlights include a wide array of burritos, burrito bowls, enchiladas, tostadas, quesadillas and sopes.
Tacos, starting at $4 and available in corn shells with cilantro and onion or flour shells with lettuce, sour cream and cheese, include selections such as chicken, chorizo, ground beef, shredded pork, marinated pork, shrimp and “Tacos Mexico Lindo” (Mexican sausage and steak with Oaxaca cheese).

Other taco options include al pastor (roast pork with pineapple) and birria with consommé (slow-simmered beef with spices).
More than a dozen entrees, starting at $11.50, include popular selections such as taquitos fraguas (six fried corn tortillas filled with chicken, topped with melted cheese, pico and sour cream) and camarones al mojo de ajo (sauteed shrimp with garlic, rice and beans).
The Avilas are in the early stages of opening their Easton restaurant, but they hope to welcome guests within the next few months following minor renovations, Jose said.
The Easton location of Mexico Lindo will occupy space that was previously home to other dining establishments, including The Kettle Room and Ciao! Sandwich Shoppe, the latter of which continues to operate a location in downtown Easton.
Most recently, it was home to Mexican restaurant Sabor Latino, which recently closed after a few months of business.
Mexico Lindo’s original Bethlehem location is open for lunch and dinner Monday through Saturday.
