Pane Pugliese is a traditional Italian sourdough bread from the Puglia region. It has golden crust and rich flavor. This rustic loaf is made from a blend of semolina and bread flour, resulting in a slightly sweet, nutty taste with a chewy yet tender texture. I found this recipe in the book “Perfect Loaf”

Ingredients:

• 95g active sourdough starter
• 200g White flour
• 185g semolina
• 45g whole wheat flour
• 340g water (plus extra 20g if needed)
