Ingredients:
• 1 cup cottage cheese (preferably smooth)
• 1/4 cup grated Parmesan cheese (optional)
• 1/2 cup milk or pasta cooking water (to adjust consistency)
• 2 cloves garlic, minced
• 1 tbsp olive oil or butter
• 1 tsp dried Italian herbs (basil, oregano)
• Salt and pepper to taste
• Fresh parsley or basil (for garnish)
• Cooked pasta of your choice (spaghetti, penne, etc.)
Instructions:
1. Sauté Garlic: Heat the olive oil or butter in a pan over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant.
2. Blend Cottage Cheese: In a blender or food processor, combine the cottage cheese, Parmesan cheese, and milk (or pasta cooking water). Blend until smooth and creamy.
3. Cook the Sauce: Pour the blended mixture into the pan with the garlic. Stir and cook on low heat, adding the dried Italian herbs, salt, and pepper. Simmer for 3-5 minutes, stirring occasionally until it’s heated through and thickened.
4. Adjust Consistency: If the sauce is too thick, add more milk or pasta water until you reach the desired consistency.
5. Toss with Pasta: Add the cooked pasta directly to the sauce. Toss to coat the pasta evenly.
6. Serve: Garnish with fresh parsley or basil and extra Parmesan if desired.

So I made this, didn't think it was going to taste great but gave it a try. I have now made it three times this week. What an amazing hack!!!
