Here is a challenge for you guys: Your most important client calls two hours before the event and increase the number by 100 people. He wants something grilled but preferably smoked. What do you do?

    some jalapeno and cheddar country sausage, they don’t take long on a smoker but still the taste is present. also chicken thighs, good luck

    Throw some lighter fluid on there and say its the smoke flavor. When people say it tastes like lighter fluid get angry and make a scene

    What are you already cooked for the existing people before the 100 extra?

    You can’t just feed the 50 soup and the next 100 steak as an example. Your challenge is lacking context.

    Wings and sausage assuming I can get them/prep really quickly. Would be a hot, fast cook and still be tight on time.

    then for the sides, buy from a local and mark up thousands of percent.

    If the store has them, a bunch of tri-tip. Smoke it for a couple hours and slice thin and serve with chimichuri,.

    I smoke chops. Short smoke time. Sear on hot plate.

    I’d go with tri tip as well.

    You really only need about a 45min-1hour smoke for trip tip with Mesquite wood. Then sear over hot charcoal and you are good to go! This way you get both the smoke and the grill from the sear at the end. Cooks much faster since you are only cooking it to about 135 vs 205 for something like pulled pork.

    Pffffft not even an issue chicken smokes quick and is one of the easiest meats to smoke hell reverse seared steak doesn’t even take two hours 30min salt drying then into the smoker for about an hour 20 then onto the grill for a couple minutes per side and serve. Now the upcharge for that service is about 10000.00. That’s a lot of extra people at the last minute. Of course, my most important client would already know that and would have planned accordingly and been expecting that upcharge.
